Recognised as one of San Francisco’s top pastry chefs—and also the current pastry chef at the one Michelin-starred Bay Area establishment Mister Jiu’s—Chef Chou worked with Yan Ting’s pastry and dim sum chef Vanness Cai to give us some masterfully balanced creations.
Theres’s the Jasmine Tea Paste snowskin with salted egg yolk and crunch of melon seeds; nourishing Red Date and Wolfberry Paste with almond flakes; almost classic combo Custard with Macadamia Nuts; and a rich Black Sesame Paste with a salted peanut truffle core. It’s sweet and savoury, and with a crunch, reminiscent of a peanut butter treat.
