For the month of June, be enthralled with Kopi Tiam’s @ Swissotel The Stamford epicurean collaboration with executive Chef Amar Chawla. Hailing from Swissotel Goa with over 26 years of culinary experience, Chef Amar brings with him a plethora of Goan delights that would tingle your senses. Chicken Carfeal | Kopi Tiam

The Chicken Carfeal ($17) was one of the better few starters on this promotional menu. Tender pieces of chicken cubes marinated with green coriander and a hint of mint to give it a slight spice. The Hara Bhara Kebab ($15), which is essentially, the Goan take on the traditional Malay potato patties, were also a worthy mention.

Butter Chicken | Kopi Tiam

Main courses fared better, and I’d suggest you save your stomach space for that. One to order is the Malabar Fish Curry ($20) – a Kerala-style fish curry with a slight smoky spice to it that pries away from the traditional coconut-heavy Indian curry. Other favourites include the Lazeez Makhani Murg ($18). For this butter chicken dish, Chef Amar uses a homemade butter recipe that gives the dish a smooth and creamy texture, yet not overly dairy rich.

I’d recommend pairing your main courses with a serving of Briyani Nizam-E-Khass ($18), which is a Goan chicken basmati rice cooked in dum with spices. The individual grains soak up all the luxuriant flavours of the gravy.

The Pearls of India promotion runs until 30th June so do drop by the restaurant if you’re craving for some Indian spices to perk up your day. Those with a low chili threshold would be glad to know that the spiciness of the dishes has been slightly mellowed.
