LaBrezza, The St. Regis Singapore - Weekend Prosecco Brunch
The haze is finally clearing up, and for that we have added reasons to celebrate besides the quality of visibly clearer air: alfresco dining and Sunday brunch. Nothing really says Sunday brunch quite like the carefree, crisp Sunday air, and an indulgent a la carte buffet, which The St. Regis Singapore has cleverly combined as the cosy Italian restaurant LaBrezza transforms into a vibrant poolside restaurant with a dedicated outdoor grill on the weekends.
It is most definitely easy to be distracted by their extensive array of tantalising appetisers—ranging from an exceptional spread of salads, cheeses, beautifully ripe vine tomatoes like the Pachino cherry and oblong San Marzano tomatoes, to freshly baked focaccia and grissini (breadsticks), and gourmet cold cuts of 24-month cured Parma proscuitto, salami and smoked salmon—but their main courses is what truly deserves the attention.
Specially curated by their team of masterchefs, diners can look forward to a concise spread of pizzas, handmade pastas and a selection of grilled seafood and meats, all prepared a la minute and executed with measured precision.
The robust Pizza Vesuvio with Italian sausage and roasted peppers, as well as the Eggs Napoli make for great ways to start off the Prosecco-filled afternoon, but I do recommend trying the surprisingly rich and dense Vegetable flans, and the Risotto special. We had a green pea risotto, topped with a slice of smoked cheese that really helped to enhance the flavours of the dish.
The freshly made tagliatelle pasta and penne dishes are thoughtfully served in smaller portions, so diners can get to savour more dishes. You definitely can’t go wrong with the Vongole, or the rich and cheesy Carbonara topped with savoury pancetta bits.
Grilled items, prepared a la minute by the pool, are pretty decent—besides the Spicy spring chicken that wasn’t spicy. The Grilled garlic prawns is wonderfully done with a deliciously smokey tang and served with beans and lemon chili flakes, but red meats are the highlight of this section.
The Grilled Australian lamb chops in a mellow lemon-mint marinade is brilliantly executed and goes fantastically well with a dash of garlic salt, as is the pink perfection Beef Striploin that is kept simple and best paired with sea salt to accentuate its natural beefy flavour.
With four slightly pedestrian desserts to choose from—only the Cannoli packed with rum cream, pistachios and chocolate chips seems interesting—the cheese section, with some mind-boggling Italian varieties, seems to be the natural answer and will keep fans of cheese plenty happy. Do grab the little morsels of blue cheese ‘sandwiches’ if you see them. The pungent cheese teams artfully well with the sweet juiciness of cherry tomatoes and crisp crunch of celery.
The Weekend Prosecco Brunch at LaBrezza is available every Saturday and Sunday (from 12noon to 3pm) at $98 per person with free-flow Prosecco; $68 per person without alcohol; and $49 per child (4-12 years old).
