New Baker X cafe by Far East Organization to showcase HBBs

For those looking for some good news this shaky start of the new year, Far East Organization has an initiative that will put a smile on your face.
Set up by the real estate developer, Baker X is a baking studio and cafe space that will house—at no costs—home-based bakers looking to scale up their business and get a taste of running a physical store. Bakers get to keep 100% of their sales proceeds and just need to cover ingredient and packaging costs.
Home-based bakers have currently been lined up through June 2022, each taking up residency of two to six weeks, and will be flanked by social enterprise Foreword Coffee Roasters—which works with responsible green coffee companies and also provide an inclusive work environment for neurodiverse individuals.
Kickstarting the series is White’s Bakery (20 December 2021 to 9 January 2022), known for creamy Basque Cheesecake in an assortment of flavours as well as Korean Fat Macarons in some festive Christmas flavours this period.
Of the Basque Cheesecakes (large slice, practically a quarter-cake from $10; 6-inch 1kg whole cake from $38) that’s—as the full-time student sells it—luscious, and rich yet lighter in sweetness, the Hojicha is my top pick.
The flavour is deep and intense—made using specially imported hojicha powder from Japan—and has an almost earthy, toastiness that worked really well with the molten, oozy Basque cheesecake texture.
I also liked the Lotus Biscoff Cookie Butter, because of the contrast from its sweet-salty crumbs and thick layer of Biscoff spread, and the more classic Oreo Cookies & Cream.
The Taro is a unique one, made with housemade taro paste and desiccated coconut. Would have enjoyed it more if there was more taro flavours infused into the cheesecake so it will feel less like two different elements slapped together.
Her chunky Korean Fat Macarons (any six for $30) is where the creativity is at, especially with flavours like Cheese, which features Ritz cheese crackers, and the Salted Pistachio with a housemade pistachio butter core. My dining companions sang praises, though I’m personally not a huge fan of buttercream so it can sometimes come off a bit greasy to me.
