What: Well-loved seafood gem of the East, Diamond Kitchen 钻石小厨 now has a new and bigger outlet at Science Park.
What to expect: Instead of playing the waiting game at its Marine Parade flagship, where we hear advanced reservations of up to a month are required, diners can now feast on popular signatures—such as the delicious Superior Stock Clam Bee Hoon and Pumpkin Salted Egg Prawn—in peace and comfort at Diamond Kitchen's modern and tranquil 260-seater outlet in the West.
Deal: Till 31 July 2015, the restaurant is offering a 7-Course Diamond Seafood Signatures Menu at $88 (U.P. $150/pax, min. 4 pax), available exclusively at Diamond Kitchen Science Park.
Start off with a refreshing Shredded Chicken Salad, generously garnished with sliced abalone, black fungus and red chilli, before having tender Bamboo Clams and vermicelli noodles, bathed in a slurp-worthy, special chef stock, topped with oh-so fragrant, crispy fried garlic.
For the third course of Giant Grouper, choose between having it steamed Hong Kong style or bubbling in a claypot of chef's savoury superior stock.
Highlight of the menu is most definitely the indulgent yet comforting Lobster Porridge. Live local lobsters are first steamed, then boiled lightly together with chicken stock, Chinese wine, ginger and 'pao fan' (broken rice) to better absorb the rich flavours.
Also noteworthy is the signature Gan Xiang Crab. Huge, succulent Sri Lankan crab is expertly wok-fried with a delicious, secret blend of more than 20 spices that includes curry powder, hae bee hiam (spicy dried shrimp), lemongrass and dried chilli, resulting in a unique smokey sweetness balanced with an addictive spiciness.
