New Dim Sum Menu at Shang Palace
Dim sum stalwart Shang Palace welcomes exquisite, winning creations by new dim sum chef Kerene Cheng. Female chefs are uncommon, and it is truly a rare sight to find a Singaporean lady who specializes in this fine art of blissful bites.
Delightful and worthy of repeat visits is their spread of finessed classics. My personal favourites were the ones with an extra touch of indulgence: the golden Xiao Long Bao filled with a toothsome crab roe and pork filling; steamed Teochew Dumpling, stuffed with baby abalone, pork and dried shrimp; and the unbelievably pillowy, steamed Turnip Cake enjoyed with conpoy, Chinese sausage and crisp dried shrimp.
Other highlights include the Deep-fried Bacon Roll—because bacon makes everything better—with a tangy Thousand Island sauce and the genius pairing of an addictive Japanese sesame and truffle oil mix in chef's Yuan Yang Dumpling (duo of pan-fried and boiled variations).
