This year, Chef de Cuisine Antonio Facchinetti whips up an indulgent Truffle Treasures menu showcasing both black and white truffles that will satisfy gourmands and truffle connoisseurs alike.

A unanimous favourite, the oozy Tomino alla Griglia ($38, grilled Tomino cheese) with white truffle and an endive salad was faultless, but if you are not a fan of dairy products, go for the Tartare di Manzo ($40). The extremely tasty Angus beef tartar melds perfectly with anchovy, quail egg and vibrant diced olive to highlight the earthy flavours of white truffle.

I'm not a fan of polenta, so I was pleasantly surprised by the Polenta Bianca with Foie Gras ($36). Deftly executed to a smokey, pan-seared finish, the goose liver is accompanied by luscious truffles tones on a bed of pleasingly creamy, thick white polenta.

It is impossible to escape from risotto where truffle is involved, and Chef Antonio's White Truffle Risotto ($75) thankfully did not disappoint. The mix of asparagus and wild mushrooms gave a mellow umami hint that elevated the richness of dish, and was a reminder of how simple dishes when done right, could be amazing.

Simpler in flavours, but executed just as well is the Uova da Raviolo ($38), a large ricotta ravioli of savoury spinach, Parmesan, a whole poached egg, and topped with white truffle.

Equally delicious are their hearty mains of Baked Whole Quail ($46) with a robust cotechino and black truffle stuffing, and the succulent Wood Oven-roasted Veal Chop ($48) topped with white truffle slices. The beef was beautifully tender and balanced with enough fat for it to have just enough bite, and is served with delicious black truffle potato mash and jus.

If you still have room for desserts, go for the refreshing Meringa al Tartufo Nero ($30). An almost marshmallow-like black truffle meringue envelops a citrus mint cremeux middle, and is served with a piquant passion fruit foam and hazelnut truffle soil.
