Every Sunday henceforth, lend your afternoon some old-world charm as their iconic Lobby Lounge is transformed with a masterful epicurean spread with 7 'live' cooking stations featuring classic brunch nosh and Executive Chef Eric Neo's Asian-infused specialities, complete with free-flow Veuve Clicquot Brut Yellow Label Magnum Champagne, refreshing Pink Elephant Rosé and bespoke cocktails by a dedicated mixologist.
Once you're done picking on their succulent spread of chilled fresh seafood and oysters—they've managed a steady supply of freshly shucked Fine de Claire, Tasmanian and Fanny Bay oysters—I highly recommend visiting the extremely popular egg station—second only to the station serving up premium, pan-seared 365 days grain-fed US beef—where you can have eggs your way, and with an indulgent touch of caviar.
I much preferred the Eggs Benedict with Salmon & Caviar amongst others—the luscious yolk from the perfectly poached egg served as a base while the fresh chives and smoked salmon lured out the silky and intense flavour from the modest caviar crown.
Also hearty and delicious is their generous servings of buttery-smooth Pan-seared Foie Gras—delightfully balanced with the smokey crunch of grilled bread and caramelized onions, Kurobuta Pork Sliders and lip-smacking Pot-steamed Australian Mussels in Sauce à la Mirepoix that calls for seconds, and thirds.
Besides the Peranakan-inspired tapas of Beef Cheek Rendang on Rice Cracker, Homemade Seafood Otah Otah and Satay, another dish that pays tribute to their Asian heritage is the Chilli Crab Linguine. Putting a twist on a local favourite is never an easy task, but Chef Eric's version was spicy and complex with a slight acidity that lent it a surprisingly appetizing edge.
Those with an appetite for sweets will not be disappointed by their array of prettily plated pastries by award-winning pastry chef Steven Ong—including Chocolate Royale Hazelnut Crunch, Panna Cotta with Basil and Mint, complete with Crepe Suzette and Irish coffee, prepared tableside. And those who fancy the savourious will surely enjoy their selection of charcuterie—the Jamon Iberico de Bellota aged for 30-36 months is a definite highlight—and cheeses.
The 'Art of Sundays' Champagne Brunch is served at InterContinental Singapore’s Lobby Lounge every Sunday from 11.30am to 3pm.
