Park Palace, Grand Park City Hall - Chinese New Year 2014 Offerings
A previous fierce contender for our Six&Seven Best Yusheng of 2013, expectations were high for what Grand Park City Hall's new Executive Chef William Lim will think up for Park Palace's unique, signature Shunde-style Yusheng.
This year, and it seems so every year, luxe is the keyword. The new and exquisite Imperial Five Treasures Golden Shunde Yusheng ($888) is a sure-toss to prosperity and success in the new year what with prized ingredients like abalone, lobster, geoduck clam, salmon and hamachi—adorned with cherry blossom-shaped crowns of caviar and fish roe, and later edible gold flakes. Brilliantly crisp fried vermicelli replaces the traditional salad, then tossed together with a special heady peanut oil and premium soya sauce concoction for an amazingly light, savoury experience—a refreshing change from the usual sweeter messes.
Also new and delicious is the hearty Auspicious Harvest Pen Cai with braised to perfection Pig Trotters (takeaway $298 for 6-pax, $288 for 10-pax, a la carte $270 for 6-pax, $443 for 10-pax). Taking more than 5-hours to create, each of the 18 luxuriant items is painstakingly prepared separately before assembled into this communal pot of flavoursome indulgence so as to maintain the individual textures and taste of various ingredients.
Other highlights include their famed Imperial Suckling Pig ($255 for whole pig) with irresistible, ultra crunchy skin, and the Auspicious Lobster Gems in Two Styles. Fresh lobster is deftly sautéed with lily bulbs, wood fungus and asparagus to a silky smooth finish, nicely contrasting with the mouthfeel of deep-fried lobster balls filled with oozing molten cheese.
