Sunday Brunch - The Knolls @ Capella Singapore

With just about every other restaurant serving up Sunday brunches, one is spoilt for choice when deciding where to dine. Restaurants upscale their offerings, providing a wider selection of food and popping their best champagne to attract diners; but here at The Knolls @ Capella Singapore, a different concept emerges.

The Knolls keeps Sunday brunches simple, with its upselling point being the vicinity itself. Tucked away in Sentosa with a view of the sea and luscious greenery, The Knolls makes an apt choice when wanting a pseudo escapade sans any airport nightmares.

Mediterranean cuisine is served, and Executive Chef David Senia, whose genial disposition is as welcoming as the ambience, heads it. His exuberant nature is infectious, and is certain to liven up any dull Sunday brunches. His culinary skills are just as impressive, having stints in Michelin-starred restaurants such as L’Oasis in La Napoule and Chantecler in Hotel Negresco Nice.

Some of the highlights from the Mediterranean menu include the Seafood Bouillabaisse and the Spanish Style Suckling Pig. The tastefully deconstructed risotto, which was nicely seared to a crisp on the outside, was generously topped with scallops, prawns, and a serving of caramelized onions that brought the dish together as a whole.

But what really impressed me was The Knolls’s dessert section. At first glance, the selection seemed befitting for a queen’s afternoon tea. Artfully created, the pastry chef has certainly impressed me with his creations both in terms of appearance and taste. I had thought I found my true love after 3 slices of Opera – with each layer carefully adding a different dimension to the dessert as a whole.

Credit needs also to be given to the pastry chef’s adventurous spirit. While the Raspberry tart with wild rockets and a dash of balsamic was not the most common find in a cake shop, the unusual fate of salad ingredients in a dessert proved a novel experiment that left a vague recollection at best.

Nevertheless, Sunday brunch at The Knolls is hugely entertaining with its live music band singing their hearts out to Spanish classics. The Knolls challenges the Sunday brunch convention found in many restaurants by offering a unique experience to diners. If you’re bored of brunches synonymous with over-indulgence, do consider The Knolls for your next Sunday retreat.

Brunch is priced at $148++, inclusive of free-flow of boutique wines, or $168++ which includes free flow of champagne.
