Chinese New Year 2018 Menu Highlights from Yan, National Gallery Singapore
Few restaurants outside of a hotel offer Cantonese fine dining as Yan does. Nestled on the fifth floor of revamped National Gallery Singapore, the contemporary and stylish space boasts an authentic menu by Hong Kong-born chef Chan Kung Lai—previously of now-defunct Park Palace Restaurant.
This Year of the Dog, Yan offers 7 specially curated set menus, ranging from $118 to $268 per person, featuring both exquisite new creations and some much-welcomed, finessed Cantonese classics.
Not-to-be-missed is Yan’s signature 'Shun De Style' Lo Hei.
Featuring a mini mountain of crispy fried vermicelli, an inviting, house-blend soy sauce, and choice of prime additions such as premium slices of salmon, yellowtail and lobster, the resultant mix is savoury (contrasting against the slew of sweet renditions), light and perfectly balanced.
The ‘Shun De Style’ Salmon and Yellow Tail with Lobster Fillet Lo Hei is priced at $128, and is also available as part of Yan’s eight-course Lunar New Year Set Menu at $268/person for group of 8-10.
As a Cantonese restaurant, you can expect soup here to be superb. We had the Double-boiled Chicken Soup with Sea Whelk (available as part of the Lunar New Year Set Menus). Especially comforting on a chilly evening, but equally nourishing any other time.
Also delicious are the Braised Deluxe Seafood Platter ($38/person, min. 4 persons) of 9 premium ingredients, as well as chef's Signature Roast Crispy Suckling Pig ($124 half, $248 whole; also available as part of the Lunar New Year Set Menus) that's enjoyed three ways: crispy skin on soft Chinese pancake with a tangy plum sauce; carved shoulder; and oven-baked with fragrant lemongrass.
PS. Yan also has a Harvest Pen Cai available for takeaway at $250 nett (5 persons) or $500 nett (10 persons). The thoughtfully prepared 20-ingredient treasure pot showcases an array of fresh seafood, hearty meats and braised vegetables such as sliced abalone, sea cucumber, scallop, roast pork, soya chicken, Bai Ling mushrooms, gingko nut and sea moss among other premium ingredients.
