What to expect: The classic G&T is made fashionable again as Martin Villareal, mixologist at Chihuly Lounge, showcases a remarkable selection of four distinctly flavoured American gin & tonic cocktails as part of his 'Make Gin Great Again' promotion, where guests can enjoy quality G&Ts at just $12 every day, 9AM-1AM.

American gins are flavoured with a variety of botanicals such as fruit, citrus or floral ingredients which allow them to be paired with uniquely flavoured tonics and bitters. The four cocktails we have created range in taste and aroma, and lend a twist to the classic Gin and Tonic. - Martin Villareal

Customise your own tipple, or simply leave it to the meticulous mixologists to whip up some tasty, refreshing goblets from the four different American gins, combination of East Imperial Tonic Waters, bitters and garnishes:

Matched with slightly bitter but delicious grapefruit tonic, lavender bitters, fresh grapefruit slices and lavender stalks, the floral and citrusy accents of the Brooklyn G&T ($12) make it almost too easy to overlook how potent the pretty drink is.

Combining three simple botanicals of the gin (juniper, coriander and fennel) with a touch of lemon, the Death's Door G&T ($12) is crisp, clean and refreshing—reminiscent of a herb garden after the rain.

With obvious cardamom hints, the Ransom G&T ($12) is decidedly zesty and citrusy—not exactly my cup of 'tea', but those who appreciate a kick of spice will like this.

Compared to the other three, the St George's G&T ($12) is uniquely aromatic with earthy notes, brightened by yuzu tonic and lemon bitters—and turned out to be my favourite of the lot.
