UsQuBa Scottish Restaurant & Bar at One Fullerton
Spanish restaurant Catalunya may have only recently exited (new venue still pending), but I have found reason to head back to The Fullerton Heritage stretch in newly opened UsQuBa Scottish Restaurant & Bar.
Occupying the now-defunct Butter Factory space at One Fullerton, the commodious establishment wows with stunning views of the Marina Bay area and vibrant New Scottish cuisine by Executive Chef Guven Uyanik that combines Scottish ingredients with French cooking techniques and an Asian touch.
Start off with a round (or three) of potent cocktails, as you savour their toasted Cherry Tomato Focaccia, indulgently adorned with black truffle shavings.
I recommend their reworked classics, such as the Manhattan ($26) and Whisky Sour ($26), or you can also go for the deadlier-than-it-looks B.O.B. The G.O.A.T. ($28) of Arbikie Highland Estate Kirsty’s Gin, Fever Tree Indian tonic water, black pepper and blueberries.
In addition to their lengthy list of close to 30 cocktails, UsQuBa carries quite an impressive variety of exclusive, rare whiskies, and fine Scottish craft gins and beers.
Standouts from their starters include the Orkney Islands Scallop Ceviche ($25)—a cool and delightful dish of fresh, plump scallops with compressed cucumber and apple, horseradish 'snow' and failproof sea urchin—and the Seared Foie Gras ($21).
Here, buttery, pan-seared foie gras is matched with waffle and some spiced persimmon and pickled apple for acidity to cut through the richness.
We also sampled their satisfying Lobster Ravioli Soup—rich, thick lobster bisque given an extra layer of complexity with porcini and port wine reduction—that’s fortunately, or unfortunately, available as part of their set lunch.
Weekday executive set lunch is priced at $38 per person for two courses, and $48 for three courses.
Other highlights include the chef’s Duet of Aberdeen Angus Beef ($56). Like a pair of brothers, the tenderloin and short rib duo are similar yet maintain their own unique style; the 24-hours braised short ribs meltingly tender, while the leaner tenderloin packs more of that deliciously beefy flavour.
Unlike other pedestrian renditions of this ultimate British dish, the UsQuBa Fish & Chips ($32) sees Scottish cod being sous-vide to a juicy, succulent finish, then matched with aromatic lemon beurre blanc and mushy peas & mint puree, and a thin, crisp European potato crown.
Hands down the best dish that evening is the masterfully executed Butter Poached Lobster ($58), where glistening, succulent flesh of a whole lobster luxuriate in a flavoursome sauce of lobster jus, then balanced with sweetness of peach.
With desserts, there's something for everyone, ranging from Chocolate Delice ($15) enjoyed with Bailey's ice-cream and Tastings of Strawberry ($15) of pistachio cream between pistachio biscuit and served with strawberry juice and strawberry sorbet, to a more local Singapore Breakfast ($11) showcasing Peanut Butter Bread Pudding with homemade kaya ice-cream.
