#BinchoxMoosehead - Bincho & Moosehead Kitchen Bar - Chargrilled Asparagus with Leeks & Garlic Miso Borne out of passion for good food and a friendship that would put some relationships to shame in this cutthroat industry, this first-ever #BinchoxMoosehead collaboration between Bincho's Chef Asai and Moosehead Kitchen Bar's Chef Manel will see 3 signature dishes (prices from $14-$35)—also the chefs' personal favourites—from each other's kitchen being served on the other's menu for the month of October.

Forget 'inspired dishes', this partnership bends boundaries by the wholehearted sharing of not only recipes, ingredients, but even suppliers, to ensure dishes stay true to original (even down to plating when possible) in an act of almost selfless cross-promotion.

While from jarringly different cuisines, the 'exchange dishes' seemed nary an inch out of place. The best part for diners is that you can enjoy all 6 featured dishes, and more, at either of the establishments.

#BinchoxMoosehead - Bincho & Moosehead Kitchen Bar - Chargrilled Octopus

We loved the meltingly tender Chargrilled Octopus ($35) from Moosehead. Over the open charcoal grill at Bincho, Chef Asai managed to suffuse this complex 'Wok Hei' smokey flavour into this already outstanding dish, teamed with a dulcet red pepper sauce.

Delicious and dangerously addictive is the golden crisp Spiced Pigs Ears ($16) that's finished with chilli flakes and lime zest for a sensation that's piquant, tangy and peppery all at once.

#BinchoxMoosehead - Bincho & Moosehead Kitchen Bar - Pacific Saury Fish

Marinated in seemingly honeyed plum sauce, I tremendously enjoyed the fried twirls of Sanma ($28, Pacific Saury Fish) paired with an equally flavoursome dashi—so good we slurped the bowl clean after.

For the adventurous, I'd recommend the deftly executed Beef Tongue ($25) topped with a bold garlic-parsley butter sauce that teases the tastebuds yet doesn't overwhelm the meat.
