For its final installment of Michelin-starred guest chefs at The Cliff @ The Singapore Resort & Spa Sentosa, Chef Saul Bolton from New York City, USA will be gracing this dining experience. Food enthusiasts will be no stranger to his renowned restaurant – Saul, in New York City. Chef Bolton’s culinary principles centre around using local produce to ensure freshness, and preparing his dishes from scratch, has earned him his Michelin star for 8 consecutive years running. Having specialized in American cuisine, it would be interesting to see how Chef Bolton plans on combining his unique touch to Asian flavours while appeasing the local palate. The Chawanmushi of sea urchin with Black Truffle Vinaigrette seems like a delicious starter to kick-off the East meets West dinner experience. Other items that stood out on the menu was the North American Hard Shelled Lobster with Carrot Curry and Long Beans.

It’s a pity that his signature at Restaurant Saul - Baby Beets and Charred Octopus Salad, is not featured on this menu; but I do hope that Spanish Octopus served would offer a close substitute. It’s not every day that one gets to enjoy the culinary deft of a Michelin-starred chef without leaving Singapore, so don’t miss out this opportunity at The Cliff. If anything, the stunning panoramic view of the setting evening sun is always a good reason to bring your date here.

The dinner is available now until 13th July, and is priced at $188++, with an option of free flow French wine for an additional $55++.
