Journey to Iloilo at Melt, Mandarin Oriental Singapore
Embark on a journey to the heart of Western Visayas Philippines as Melt @ Mandarin Oriental Singapore welcomes guest Chef Pauline Gorriceta-Banusing as she showcases a multitude of remarkable Ilonggo cuisine from now till 28th June 2014.
One can be certain that Chef Pauline’s signature dishes are vibrantly rich in aromas and colours with the use of herbs and spices to balance the flavours found in both seafood and meat. The Pork Stsig Salad, a delectable concoction of charcoal grilled pork ears, cheeks and jowls, topped with onions, calamansi and chillies had me taking a serving with every plate. There’s just something unique about the texture and crunch of pork ears and cheeks; and the spicy flavours was a welcome change from my usual fix and the Kway Chap store.
Other notable highlights included her Chicken Insal – a fragrant grilled chicken marinated in lemongrass and a medley of spices. Chicken was juicy, and offered a good blend of aromatic spices and smoky grill. The Kare-Kare, which is an enticing oxtail stew of delicious toasted rice and peanut sauce was another favourite to try.
Topping off the meal, do visit the Halo Halo station, a Filipino rendition of our local Ice-Kachang, with an assortment of toppings including jelly, beans, yam, banana and chick peas. This promotion is available until the 28th of June 2014.
