For every month starting May 2014, The Singapore Resort & Spa Sentosa will play host to an array of Michelin-starred chefs and their epicurean creations in the form of 6-course dinners at The Cliff and a Sunday Champagne Brunch at The Terrace.
For the first instalment (from now till 17 May 2014), award-winning Chef Pascal Aussignac—his famed Marmite Royale (silky foie gras flan topped off with a mild Marmite paste) is a must-try if in London—brings to The Cliff a menu reminiscent of his South West France origins, featuring the choice seasonal ingredients and produce embellished with his own personal style.
Definitely highlights of his 6-course dinner includes his hearty and full-flavoured Cappuccino of Black Pudding enjoyed with lobster and asparagus, and
masterfully executed Tulip flower (the stem tastes just like wild asparagus) stuffed with quinoa and mouclade.
