Atop of their smogasbord of brunch classics, and mouth-watering spread of delightfully fresh seafood—consisting of various crustacean on ice, and eight varieties of French and Canadian oysters—Executive Chef Massimo Pasquarelli throws in a new highlight for diners: ‘Truffle Hour’. 

Every Sunday at 1pm, a carnival of chefs take to the stage as they assemble a 3-metre presentation of freshly-shaved black truffle over piping hot, creamy Italian polenta that is seasoned a la minute with generous dashes of garlic chilli oil, pecorino cheese, sautéed porcini, and savoury perigordine gravy.

Also delicious and worth many shameless repeat visits is the 24-hour Roasted ‘Mayura Station’ Wagyu Leg counter. Grain fed for over 500-days, the melting moons of heart-flutteringly buttery, marbled meat had us immediately offering to assist our dining partners in getting a share, just so we could inconspicuously pile our plates again.

The Asian spread fared quite well too. I thoroughly enjoyed the deftly executed Seafood Fried Rice flavoured with a homemade XO sauce, and the outstandingly succulent, fork-tender Braised Pork Shoulder.

Aside from the new Oktoberfest station—expect a range of German and Swiss beers, sausages, sauerkraut, pretzels, and mustard—I’d recommend the queuing at the gorgeously plated charcuterie counter for the extremely popular Jamon Iberico de Bellota, and the ubiquitous Pan Fried Foie Gras that’s been paired with an intriguing hint of coffee, and sauternes wine sauce.

And just when you thought their spread of 12 autumn-inspired desserts, pastries, and housemade gelato was all, Greenhouse presents an assortment of over 50 French and New World house cheeses—55 types when we visited—that would have cheese fans mooing their way home.

The Autumn Vintage Champagne Sunday Brunch is available only every Sunday (12noon-3pm) through 17 November 2013, is priced at $168 per adult, $84/42 per child (6-12/3-5 years old) with free-flow Möet & Chandon Grand Vintage Blanc 2004, Moët & Chandon NV Rosé, Autumn Cocktails, selected house wines, soft drinks and fruit-flavoured sparkling mineral water.
