The highly seasonal hairy crabs are back! Fans of this great autumn delicacy can look forward to some finessed classics at Jiang-Nan Chun, whipped up from a fresh order of crustaceans from Yang Cheng Lake, by the brilliant Chef Alan Chan.
Go for their indulgent six-course menu ($168) that begins with a Steamed minced pork "Xiao Long Bao", filled with hairy crab meat and Osetra caviar, and nourishing Double-boiled superior bird’s nest with hairy crab meat and shrimp dumpling, or dive straight into the pièce de résistance - individually portioned hairy crab, steamed to perfection. Additional a la carte dishes include wok-fried rice with crab meat, egg white and crispy dried scallop.
