Chef Sho Naganuma - One Night in Langkawi – Sho Naganuma’ on AFC
Celebrity chef Sho Naganuma is one extremely charming and handsome Japanese man, and while he may be quick to modestly deny it, it is no secret that diners flock to upscale, multi-concept Hide Yamamoto at Marina Bay Sands where he currently holds the position of Executive Chef for the good nosh, and his good looks.
Taking his first step into his home kitchen with his father at a tender age of only six, the passionate chef is a strong believer of using only the finest and freshest produce in his dishes. In fact, it is probably this conviction and drive that edge Chef Sho to take up the massive challenge of cooking seven gourmet beachfront dinners over seven days without the comforts of his familiar restaurant kitchen setting.
His journey is set in the beautiful Four Seasons Resort Langkawi, and is featured in the programme ‘One Night in Langkawi – Sho Naganuma’, and will premier nationwide today (Monday), 17 June 2013 at 10pm on Asian Food Channel, StarHub Channel 435.
In addition to sharing his experiences and difficulties on this AFC original production, Chef Sho presents an exquisite selection of his signature dishes for us to enjoy. His unbelievable smooth and pillowy Chawanmushi teams briny uni seawater broth with black truffle flan, and a dollop of savoury uni. A simple yet expert twist on a classic.
Unusual to other Japanese establishments I’ve visited, Chef Sho’s sushi platter—chutoro, amaebi (sweet shrimp), ikura (salmon roe)—is served with a coat of soy sauce ‘paint’. Confident not only his produce and sushi-making skills, he takes it another step with his delicate and controlled layer of soy sauce for a meticulous balance of sushi and dip.
His Grilled Poussin stuffed with deliciously smooth, buttered soy and truffle rice, and served with fresh black truffle shavings—which the chef so gladly personally shaves for each of us—is something worth repeat visits for. The moist rice is just so deftly executed and complements the thin, crisp skin of the grilled chicken that has this lovely smokiness from a traditional Japanese charcoal grill.
