Cherry Garden @ Mandarin Oriental Singapore - New Signature Dishes
Famous for their traditional Cantonese Garden, Cherry Garden @ Mandarin Oriental welcomes its new executive chef – Chef Cheng abroad the team. Paying close homage to its traditional Chinese roots, Chef Cheng expands the line of signature dishes by putting his modern artistic spin on many old time Cantonese favourites. The Baked abalone turnover with chicken and mushroom ($22) will make you swear off any Polar chicken pies in the future. The pastry is soft, while the springy yet tender abalone lends a nice texture to the dish overall. With many new found environmentalists now avoiding sharks’ fin, the Thick superior soup of lobster, canopy and enoki mushrooms ($18) is a great substitute. While the jelly-like consistency of the sharks’ fin cannot be replicated, the soup’s richness in flavour does match up.
As for the mains, the Roasted chicken topped with Chef’s homemade crispy crust ($22, small) is a simple, yet well executed dish. The succulent pieces of chicken are topped with Chef Cheng’s recipe of crunchy herbs and spices. Almond flakes and nuts are also found in this dish, which gives the chicken an overall crunch.
The La mien soup with shredded duck and Sichuan vegetables ($10) had nothing much to rave about. The la mien soup was great, and the slices of duck delicious, but somehow they stood better individually than together as a whole.
The signature items are now available on Cherry Garden’s a la carte menu; now you have a reason to revisit one of the better Cantonese restaurants here in Singapore.
