A Maguro Adventure at Shima, Goodwood Park Hotel
Goodwood Park Hotel Singapore has recently launched a slew of F&B promotions, ranging from the return of their popular Durian Fiesta (their 35th run), a Chocolate Divine High Tea at L’Espresso to an introduction of award-winning Japanese Kagoshima Wagyu at Gordon Grill.
For Maguro (tuna) fiends, Shima’s Chef Fumihiko Hoshiba—Hokkaido's most decorated kaiseki chef with over 30 awards and 40 years of experience to his name—has curated a special Maguro a la carte selection.
Definite highlights include the Maguro Steak (100g, $60)—marbled chunks of ootoro (tuna belly) are masterfully grilled teppanyaki-style to a wonderfully smoked finish, tender pink center, that almost melts in the mouth—and the Japanese-Italian fusion Maguro Tartare ($30) where wasabi shoyu-laced akami is layered with buttery avocado mayo and topped with ikura, Oba leaf and onions.
Shima’s Maguro Festival Ala Carte Menu is available for both lunch and dinner till 16 April 2018.
This was an invited media tasting session, though all views expressed are my own.
