New Crystal Jade Prestige at Marina Bay Financial Centre
Homegrown Chinese dining brand Crystal Jade celebrates 25 years of being in the business with the launch of new upmarket concept Crystal Jade Prestige—also their first and only outlet within the CBD—that delivers on taste with a menu consisting of their finest and exclusive creations.
Located at Marina Bay Financial Centre, it presents a lovely view of the Marina Bay area—if you can, do try to catch the sunset from there.
Aside from a main dining area, the establishment also offers some private dining rooms that allow for more hushed business lunches or intimate gatherings.
Start off with their Deep-fried Scallop ($20), matched with a side of refreshing, chilled organic tomatoes and avocado sauce. Crisp, crunchy batter crust—made flavoursome with hints of salted egg and curry leaves—breaks to reveal the hunk of juicy, plump Hokkaido scallop within.
Standouts from their menu of decadent delicacies include the Roasted Baby Suckling Pig rolled with Black Truffle Pearl Rice ($20/pc $168/half or $328/whole)—an indulgent pairing of suckling pig crackling and black truffle-infused Japanese short-grain pearl rice, enjoyed with savoury abalone sauce—and the Pan-fried Beancurd with Black Truffle Sauce ($8.80).
Homemade tofu, given an intriguing grey twist with squid ink, is coated with breadcrumbs, fried then served with tempura mushrooms and a fine truffle-mushroom sauce.
Try also for their signature Tea-smoked Roasted Duck ($78/whole). Taking a grand total of 30 painstaking hours to prepare, the fowl is carved table-side so guests can take in that almost seductive, alluring smokiness.
First, savour that ultra crisp skin, best enjoyed with a touch of sugar—the sweetness really accentuates that sliver of fat beneath—then the thigh and breast meat, wrapped in soft crepes.
Or if you prefer seafood, aim straight for the Lobster & Seafood Tomato Thick Soup served in Coconut ($28) or the Pan-fried Minced Fish Noodle with Scallop ($12)—excellently executed fish paste noodles tossed in boldly umami, flavourful prawn stock reduction.
