Usher in Chinese New Year 2016 at Hai Tien Lo
Master Chef Lai Tong Ping of Hai Tien Lo, Pan Pacific Singapore has truly outdone himself with this year’s plentiful selection of prosperity offerings, spreading across a lineup of eight auspicious set menus: Fortune, Happiness, Wealth, Luck, Abundance, Harvest, Success, and the aptly named vegetarian option, Nutritious Vegetarian.
The most impressive highlight this Chinese New Year is his delicious range of Yusheng, available for both dine-in and takeaway, that comes with a varied array of toppings, ranging from Alaskan crab meat to Japanese kelp and even wild ginger flower.

I especially enjoyed the Wealth Happiness Yusheng (takeaway $148, small; $198, large)—a crisp, crunchy and savoury amalgam, elevated with bright citrusy notes—teamed with fresh Boston Lobster, Norwegian salmon, surf clams, and hericium mushroom (more affectionately known as 'monkey head mushroom’), then luxuriously topped with gold and silver flakes.
There’s also an even more luxe version of the Wealth Happiness Yu Sheng that comes with Hokkaido Scallops (and Boston Lobster, Norwegian Salmon, Surf Clams, Hokkaido Scallops, Mushrooms, Gold and Silver Flakes), priced at $168 small, $238 large. Other highlights include the extremely tasty and nutritious Buddha Jumps over the Wall—that comes with Matsutake mushroom, abalone, dried scallops, chicken and more—and the Classic Auspicious Treasure Pot ($238, small; $398, large).

It is a huge and savoury alternative to the usual Pen Cai, including masterfully executed ingredients such as Eight Treasures Whole Chicken, whole abalone, mushrooms, sea cucumber, dried oysters, beancurd, black moss and Chinese baby cabbage.
