The Unexpected Beast
After tracking through lanes of dreary establishments and uninspiring cafes, we were ready to write off The Beast, located at Jalan Klapa—what with their barn house chic and seemingly casual service—but we're glad we stayed for this unexpected twist of authentic, hearty Southern grub.
The menu is mostly influenced by owner Jamie Koh's stint at a university in Atlanta, Georgia, and some borrowed heritage recipes from friends. Call it true blue comfort food, or cardiac arrests served on plates, Southern cuisine is unapologetically sinful and almost always fried, sloppy or a mix of both.
With fried chicken being a key dish of this niche, we couldn't pass up on The Beast's signature Chicken & Waffles ($20, available for lunch and Sunday brunch). Prepared in a buttermilk marinade, the chicken is gorgeously fried on the outside and succulent, not greasy on the inside. A bourbon maple butter sauce gives a tasty twist to the otherwise crisp waffle.
Other noteworthy and quintessentially Southern American dishes include the homely, savoury Biscuits & Gravy ($18, available for Sunday brunch), as well as a petite serving of gooey Bacon Mac & Cheese ($9, side) with sharp hints of cheddar.
We ended off the meal with two desserts from different ends of the spectrum; a Peach Crumble ($12) with buttery, gently-spiced topping, enjoyed with vanilla bean ice cream; and a sticky Maple Glazed Donut ($5) topped with real bits of bacon that is best enjoyed warm.
