Jiang-Nan Chun, Four Seasons Singapore - 'Journey to the West'

With the success of last year’s “Dream of the Red Chamber” inspired dinner, Chef Alan Chan of Jiang Nan Chun @ Four Seasons Hotel has put together another masterpiece. Looking to one of the most read Chinese folktales – Journey to the West, Chef Alan has taken inspiration from this novel to create an exquisite 6-course dinner.

The meal starts off with a Seafood Platter, consisting of Alaskan crab, lobster and abalone. Chef Alan draws inspiration from the first few chapters of the novel, when Sun Wu Kong visits the Dragon King of the Eastern Sea. The dish reflects the myriad of colours in the underwater world of treasures, and is simply delectable on the palate.

Other favourites include the Sous-vide Short Rib with Chef’s Sauce. In detailing how Sun Wu Kong was tricked and thwarted by the Bull Demon King in his journey, those familiar with this novel will recognize the significance of the “spring roll” that garnishes the rib.

Each dish is truly remarkable, and is an expression of a beautiful marriage between culinary and literary art. Much planning has certainly gone into the creation of each course, and I can’t think of a better way to end 2013 than a tribute to a classic Chinese novel with every bite.

The 6-course dinner is priced at $138++ per person, and will be available from now until 5th January 2014.
